Cultured Dairy Products


Brief Description:

Students will examine the process of converting milk into cultured dairy products by producing yogurt and cottage cheese. Students will also graph the volume conversions required to convert fluid milk into common dairy products.

Objectives: Students will be able to:

  1. Describe how yogurt and cheese are made.
  2. Produce yogurt and cottage cheese.
  3. Develop a histogram of the volume of milk needed to produce several dairy products.
  4. Use the Internet to research and as a group give either an oral report or write a written report on the production and processing of a dairy product of their choice.

Time:

Activity One:30 minutes
Activity Two: 2, 45 minute class and the intervening time period
Activity Three: 2, 45 minute class periods
